Owner of Florindo's Speaks Out

Glenwood Springs - The owner of a restaurant in Glenwood Springs is speaking out following days of controversy surrounding his business. Florent Gallicchio has been the owner and chef at Florindo's Italian Cuisine for more than two decades, and he's had a steady following. But when an employee named Damien Cardone took to Facebook claiming he would purposely prepare gluten-filled meals for customers who requested gluten-free foods, the phone at Florindo's started ringing.

Many of those calls were from people with Celiac Disease, a condition triggered by consumption of the protein gluten, which is primarily found in bread and pasta.

However, Gallicchio says Cardone was only a part-time waiter, and there's no way he got a hold of anyone's food.

"I want the customers to know that everything is safe like it was before and we're still open for business. If somebody calls me and they want gluten-free, I will tell them yes or no, or usually I will give them a choice of another dish, which they are very happy for," said Florent Gallicchio, owner and chef at Florindo's.

Gallicchio says Cardone left his position at Florindo's two weeks ago. There have been no confirmed cases of anyone getting sick at the restaurant.
